THE ART OF HOSPITALITY, DIEGO MASCIAGA, WATERSIDE INN, BRAY

This weekend we had a truly wonderful food experience at the Waterside Inn, we were also lucky to experience the incredible hospitality of Diego Masciaga the restaurant’s maitre d’ and general manager.  Diego was awarded the Grand Prix de l’Art de la Salle from the L’Académie Internationale de Gastronomie in recognition of his  outstanding work and now we know why! He is a complete pro, so kind and charming as were all of the front of house team at the Waterside Inn. After our meal (the roast chicken dish was a particular favourite) we had a quick tour of the kitchens which were big, gleaming and impressive.  It’s a place for special occasions (due to the eye-watering prices) but it really does deliver a memorable time.  We loved it.

The wonderful Angela Hartnett organised a whirlwind trip food trip to France, first stop was dinner at the legendary Michel Bras 3 Michelin star restaurant in Laguiole.  For the last 30 years Michel Bras has been cooking spectacular food in Laguiole, a small village in the remote Aubrac mountains of south-central France.  Bras is renowned for his purity of cooking using complex techniques to elevate humble ingredients like onions, bread and mushrooms, with astonishing, often whimsical result.  We of course had to try some of his signature dishes and they did not disappoint; his salad composed of 60 individually prepared vegetables, flowers and seeds that vary depending on the day looked so beautiful on the plate and was a taste sensation. Bras also invented the now-ubiquitous molten chocolate cake: it’s hard to imagine a dish that better exalts the cocoa bean.  It was amazing to eat this dessert from the kitchen of the chef who created it.

The dishes were so beautifully presented and the cooking displayed such creativity, even though we are not a food blog we felt compelled to share some pictures of our very special dinner.

LAGUIOLE FRANCE, FOOD TRIP TO MICHEL BRAS

Earlier in October we were lucky enough to spend a few days in France on a gastronomic whirlwind trip.  First stop was Laguiole in the Midi-Pyrénées an area known for its Laguiole cheese and as the birthplace of the Laguiole knife (there a lot of amazing knife shops in the village).  Laguiole is also famous for Michel Bras, a three star Michelin restaurant regularly voted as one the best in the world and (as we were to discover) with good reason!  The evening we arrived the sun was setting and our room was bathed in the most spectacular sunlight.  The restaurant juts out over the side of a large hill, its architecture is modern so its looks very dramatic.  There was a lot of Japanese influence in the landscaping of the restaurant’s grounds particularly in the areas where the hotel rooms are located, it made for a very serene and tranquil atmosphere.
